Fried Blue Fish, and other Kinds
A classic recipe for frying fish.
Ingredients
- as needed Blue Fish (or other fish)
- as needed All-purpose flour
- as needed Salt
- as needed Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
- as needed Parsley, chopped
Instructions
- 1Clean the fish, wipe it dry inside and out. Sprinkle with flour, and season with salt.
- 2Heat butter or vegetable shortening in a skillet over medium-high heat. Fry the fish until golden brown, about 5-7 minutes per side, or until cooked through. A mixture of 1/2 butter and 1/2 vegetable shortening makes a good mixture for frying fish.
- 3The moment the fish is done to a good brown, take it from the fat and drain it in a hot strainer. Garnish with parsley.
