Fricassee of Oysters

A classic oyster fricassee recipe.

Ingredients

  • 75 oysters Oysters
  • 1 glass Chicken broth
  • 1 glass White wine
  • 2 blades Mace
  • 1 piece (size of an egg) Butter
  • 1 1/2 tablespoonfuls Flour
  • 5 eggs Egg yolks
  • 1 saltspoonful White pepper
  • 1 saltspoonful Salt
  • 1 tablespoonful Chopped parsley

Instructions

  1. 1Place the oysters in a pot with their liquor, an equal quantity of chicken broth, 1 glass of white wine, and 2 blades of mace. Bring to a boil. (Prep time: 5 minutes, Perform time: 10 minutes, Waiting time: 0 minutes)
  2. 2Once the oysters boil, remove them from the heat. Strain the boiling liquor and return it to the pot. (Prep time: 0 minutes, Perform time: 5 minutes, Waiting time: 0 minutes)
  3. 3In a clean stewpan, melt a piece of butter the size of an egg. Add 1 1/2 tablespoonfuls of flour and stir for 5 minutes, ensuring it doesn't brown. Add the strained liquor and stir for another 5 minutes. Then, add 5 egg yolks, 1 saltspoonful of white pepper, 1 saltspoonful of salt, and 1 tablespoonful of chopped parsley. Do not let it boil.
