French Rolls

French Rolls

A recipe for classic French rolls.

Ingredients

  • 1 quart Flour
  • 1 teaspoonful Salt
  • 2 teaspoonfuls Royal Baking Powder
  • 1 tablespoonful Butter (or vegetable shortening) (Originally lard. Substituted with butter or vegetable shortening for modern preference.)
  • 1 pint Milk

Instructions

  1. 1Sift flour, salt, and butter (or vegetable shortening) together thoroughly. Rub in the butter (or vegetable shortening) cold. Add milk and mix into a rather firmer dough than ordinary.
  2. 2Turn out dough onto a lightly floured surface and immediately give it 1 or 2 quick, vigorous kneadings to complete its smoothness. Divide it into pieces the size of an egg, then each piece in half. Form each half under your hands into the appearance of short, thick rolls tapering sharply at each end. Put two of these pieces together side by side, pinching the ends together a little. Lay them on a greased baking tin.
  3. 3Wash the rolls over with milk. Bake in a hot oven at 400°F (200°C) for 15 minutes.
