French Pancakes

French pancakes made by following the instructions for English Pancakes, then spreading with preserves, rolling up, and glazing.

Ingredients

  • 1 pint Milk
  • 2 Eggs
  • 1 tablespoonful Sugar
  • 1 cupful Flour
  • 1 teaspoonful Baking powder
  • 1 cupful Cream
  • 1 pinch Salt
  • as needed Butter
  • as needed Preserves
  • as needed Powdered sugar

Instructions

  1. 1Sift flour, salt, and baking powder together. In a separate bowl, beat eggs with sugar. Dilute the egg mixture with milk and cream. Mix the wet ingredients into the dry ingredients to form a thin batter.
  2. 2Heat a small, round frying pan over medium heat. Melt a little butter in the pan. Pour about 1/2 cup of batter into the pan, turning the pan to spread the batter evenly. Cook until the first side is browned, then flip and brown the other side.
  3. 3Once all pancakes are cooked, spread each with any kind of preserves, roll them up, and sift over plenty of powdered sugar.
