French Muffins
A classic muffin recipe from 1888.
Ingredients
- 1 1/2 pints All-purpose flour
- 1 cupful Honey
- 1/2 teaspoonful Salt
- 2 teaspoonfuls Baking powder
- 2 tablespoonfuls Butter
- 3 eggs Eggs
- 1/2 pint Whole milk or heavy cream
Instructions
- 1Sift together the flour, salt, and baking powder in a large bowl.
- 2Rub the cold butter into the dry ingredients until the mixture resembles coarse crumbs. In a separate bowl, whisk the eggs, milk or cream, and honey.
- 3Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix. Fill greased muffin tins about 1/2 full. Bake in a preheated oven at 350°F (175°C) for 20 minutes, or until a toothpick inserted into the center comes out clean.
