French Muffins

A classic muffin recipe from 1888.

Ingredients

  • 1 1/2 pints All-purpose flour
  • 1 cupful Honey
  • 1/2 teaspoonful Salt
  • 2 teaspoonfuls Baking powder
  • 2 tablespoonfuls Butter
  • 3 eggs Eggs
  • 1/2 pint Whole milk or heavy cream

Instructions

  1. 1Sift together the flour, salt, and baking powder in a large bowl.
  2. 2Rub the cold butter into the dry ingredients until the mixture resembles coarse crumbs. In a separate bowl, whisk the eggs, milk or cream, and honey.
  3. 3Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix. Fill greased muffin tins about 1/2 full. Bake in a preheated oven at 350°F (175°C) for 20 minutes, or until a toothpick inserted into the center comes out clean.
