French Cake

A rich and flavorful cake with a blend of fruits, nuts, and aromatic extracts.

Ingredients

  • 1.5 cupfuls Butter
  • 2 cupfuls Sugar
  • 12 Eggs
  • 1 quart Flour
  • 0.5 teaspoonful Royal Baking Powder
  • 1 gill Cream
  • 1 gill Wine
  • 1 gill Brandy
  • 20 drops Royal Extract Bitter Almonds
  • 20 drops Nutmeg
  • 1.5 cupful Raisins, stoned
  • 0.5 cupful Almonds, blanched
  • 1 cupful Citron, chopped

Instructions

  1. 1In a large bowl, rub together 1 1/2 cupfuls of butter and 2 cupfuls of sugar until the mixture is white and light cream.
  2. 2Add 12 eggs, 2 at a time, beating for 10 minutes between the first 3 additions, and 5 minutes between the rest.
  3. 3Add 1 quart of flour sifted with 1/2 teaspoonful of Royal Baking Powder, 1 1/2 cupful of stoned raisins, 1/2 cupful of blanched almonds, 1 cupful of chopped citron, 20 drops of Royal Extract Bitter Almonds, 20 drops of Nutmeg, 1 gill of cream, 1 gill of wine, and 1 gill of brandy to the batter. Mix until a smooth, consistent batter is formed.
  4. 4Preheat oven to 325°F (160°C). Pour the batter into a thickly paper-lined cake pan. Bake in a steady oven for 2 hours.
