Family Soup
A hearty soup made with meat, vegetables, and herbs.
Ingredients
- 3 quarts Pot liquor (or beef/chicken broth) (Originally pot liquor, the water in which mutton or salt-beef has been boiled. Substituted with beef or chicken broth for modern preference.)
- as needed Meat bones or trimmings
- 1 pound Gravy beef
- 2 large Onions
- 1 Turnip
- 2 Carrots
- a little Celery seed
- bunch Savory herbs
- 1 sprig Parsley
- 5 Cloves
- 2 blades Mace
- a few Peppercorns
- to taste Pepper
- to taste Salt
Instructions
- 1Place meat trimmings, meat bones, and gravy beef (if using) into a large stewpan or pot. Stick the onions with the cloves. Add the onions, turnip, carrots, celery seed (tied in muslin), savory herbs, and parsley to the pot with the meat.
- 2Pour the pot liquor (or broth) over the ingredients in the pot. Bring to a simmer over low heat. Gently simmer, removing any scum that rises to the surface. Continue simmering for approximately 30 minutes, or until the flavors have melded.
- 3Strain the soup through a fine-mesh sieve. Season with pepper and salt to taste. Serve hot.
