English Muffins
A classic recipe for English muffins, adapted for modern cooking.
Ingredients
- 1 quart All-purpose flour
- 1/2 teaspoonful Granulated sugar
- 1 teaspoonful Salt
- 2 large teaspoonfuls Baking powder
- 1 1/4 pints Milk
- as needed Butter
Instructions
- 1In a large bowl, sift together the flour, sugar, salt, and baking powder. Add the milk and mix until a smooth batter forms. The batter should be slightly thicker than pancake batter.
- 2Heat a griddle over medium heat. Grease the griddle and place muffin rings on it (if using). Fill the rings halfway with batter. When the muffins have risen well up to the top of the rings, gently flip them with a spatula. Cook until they are a buff color, not too brown.
- 3Once cooked, pull each muffin open in half. Toast the halves delicately. Butter well and serve hot on a folded napkin.
