Duchesse Sauce

Duchesse Sauce

A rich chocolate sauce.

Ingredients

  • 2 ounces Grated chocolate
  • 1/2 pint Whole milk (Originally milk.)
  • 4 Egg yolks
  • 1/2 gill Heavy cream
  • 1/2 cupful Granulated sugar
  • 1 teaspoonful Vanilla extract (Originally Royal Extract Vanilla.)

Instructions

  1. 1In a saucepan, combine the grated chocolate and milk. Heat over medium heat, stirring constantly, until the chocolate is melted and the mixture is smooth. Continue to simmer for 5 minutes.
  2. 2In a separate bowl, whisk together the egg yolks, cream, and sugar. Slowly pour the warm chocolate mixture into the egg mixture, whisking constantly to prevent the eggs from scrambling. Strain the mixture through a fine-mesh sieve into a clean saucepan.
  3. 3Return the saucepan to medium heat. Stir constantly until the sauce thickens to the consistency of honey, about 5-7 minutes. Remove from heat and stir in the vanilla extract.
