Duchesse Cake

Duchesse Cake

A classic cake recipe from the Royal Baker Pastry Cook.

Ingredients

  • 1 1/2 cupfuls Butter
  • 1 cupful Sugar
  • 6 Eggs
  • 1 teaspoonful Baking Powder (Originally Royal Baking Powder.)
  • 1 pint Flour
  • 1 teaspoonful Cinnamon Extract (Originally Royal Extract Cinnamon.)

Instructions

  1. 1In a large bowl, cream together the butter and sugar until light and fluffy.
  2. 2Add the eggs, two at a time, beating for 10 minutes between each addition until well combined.
  3. 3In a separate bowl, sift together the flour and baking powder.
  4. 4Add the dry ingredients and cinnamon extract to the butter mixture. Mix until a medium-thick batter forms.
  5. 5Preheat oven to 350°F (175°C). Line small, shallow, square pans with thin white paper. Pour batter into the prepared pans and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. 6Once the cakes are taken from the oven, ice them as desired.
