Dried Apple Pie
A classic dried apple pie recipe from the Royal Baker Pastry Cook.
Ingredients
- as needed Apples
- 2 Eggs
- 1/2 cup Butter
- 1/2 cup Sugar
- as needed Sugar (Quantity of sugar must be governed somewhat by the acidity of the apples.)
Instructions
- 1Stew apples until quite soft. Rub the cooked apples through a colander to create a juicy apple puree.
- 2Beat two eggs, saving the white of one. Add 1/2 cup butter and 1/2 cup sugar to the apple puree. Season to taste. Adjust sugar based on the apples' acidity.
- 3Bake the pie with a bottom crust in a preheated oven at 400°F (200°C) for approximately 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
- 4While the pie is baking, make a frosting using the reserved egg white. Beat the egg white until stiff peaks form.
- 5When the pie is done, spread the frosting evenly over the top. Set the pie back in the oven and brown the frosting slightly for a few minutes, watching carefully to prevent burning.
