Deviled Crabs

A classic deviled crab recipe.

Ingredients

  • 1 cup Crab meat
  • 2 tablespoonfuls Bread crumbs
  • 2 yelks Hard boiled eggs
  • 1 tablespoon Lemon juice
  • 1/2 teaspoonful Mustard
  • 1/8 teaspoon Cayenne pepper
  • 1/4 teaspoon Salt
  • 1 cup Butter
  • 2 tablespoonfuls Flour
  • 1 pint Water
  • 1 tablespoon Parsley

Instructions

  1. 1In a small saucepan, melt 1/3 cup butter over medium heat. Whisk in 2 tablespoonfuls flour until smooth. Gradually whisk in 1 pint boiling water. Season with salt. Add parsley if desired. Simmer until slightly thickened. Remove from heat and set aside.
  2. 2In a bowl, mix 1 spoonful of bread crumbs with the chopped crab meat, egg yolks, lemon juice, mustard, cayenne pepper, salt, and drawn butter. Stir until well combined.
  3. 3Fill scallop shells or small paté-pans with the mixture. Sift bread crumbs over the top. Preheat oven to 400°F (200°C). Bake for 20 minutes, or until the top is lightly browned and the filling is heated through.
