Custard Fritters
Custard fritters made with a custard base, dipped in batter, and fried.
Ingredients
- 1/2 pint Milk
- 5 Eggs
- 1/2 cupful Sugar
- 1 gill Heavy cream
- 1 cupful Flour
- 1/2 teaspoonful Baking powder
- 1 pinch Salt
- 2 Eggs
- 1 cupful Milk
- 1 tablespoonful Sweet oil (or neutral oil) (Originally sweet oil. Substituted with neutral oil for modern preference.)
- as needed Lard (or butter, vegetable shortening, or neutral oil) (Originally lard. Substituted with butter, vegetable shortening, or neutral oil for modern preference.)
- as needed Sugar
Instructions
- 1In a bowl, beat together the milk, cream, sugar, and eggs.
- 2Strain the mixture. Pour into a small bowl and set the bowl in a saucepan with boiling water, ensuring the water reaches halfway up the sides of the bowl. Steam very gently until the custard is set, about 20 minutes. Place on ice until cold.
- 3Sift flour, salt, and baking powder together. Add the oil, beaten eggs, and milk. Mix into a batter as for griddle cakes.
- 4Cut the cold custard into pieces about 1 1/2 inches long by 1 square. Dip the custard pieces into the common batter and fry in plenty of hot lard until a deep fawn color.
- 5Serve the fritters sprinkled with sugar.
