Crushed Wheat Griddle Cakes
Fluffy griddle cakes made with crushed wheat, served with a simple cream sauce.
Ingredients
- 1 cupful Crushed wheat
- 1 1/2 pints All-purpose flour
- 1 teaspoonful Brown sugar
- 1/2 teaspoonful Salt
- 2 teaspoonfuls Baking powder
- 1 Egg
- 1 pint Milk
- 1/2 pint Milk
- 1/2 pint Heavy cream
- 1 Egg yolk
- 1 tablespoonful Buckwheat flour
- 1 pinch Salt
Instructions
- 1Boil 1 cupful crushed wheat in 3/4 pint of water for 1 hour. Let it cool.
- 2Dilute the cooled crushed wheat with the beaten egg and 1 pint of milk.
- 3Sift together flour, sugar, salt, and baking powder.
- 4Add the sifted dry ingredients to the crushed wheat preparation. Mix into a smooth batter.
- 5Heat a griddle. Pour batter onto the hot griddle and cook until golden brown on both sides.
- 6Bring 1/2 pint milk and 1/2 pint cream to a boil in a thick saucepan. Add 1 tablespoonful buckwheat flour dissolved in a little milk, stirring rapidly to prevent lumping. Allow to boil for 5 minutes. Remove from heat and beat in the egg yolk diluted with a tablespoonful of milk. Season with a pinch of salt.
- 7Serve the griddle cakes with the Hygienic Cream Sauce.
