Croquettes of Sweetbreads

Delicious croquettes made with sweetbreads, mushrooms, and a creamy sauce.

Ingredients

  • 12 dozen Sweetbreads
  • 1/2 can Mushrooms
  • 2 finely chopped Shallots or Garlic
  • 1 piece Butter
  • as needed Allemande sauce
  • as needed Salt
  • as needed Pepper
  • as needed Nutmeg
  • as needed Chopped Parsley
  • 2 yelks Eggs
  • as needed Bread crumbs
  • as needed Lard (Originally lard. Substituted with butter or vegetable shortening for modern preference.)
  • as needed Mushroom or Cream Sauce
  • as needed Beef tongues (optional)
  • as needed Truffles (optional)

Instructions

  1. 1Blanch and braise 1 dozen sweetbreads. When cooked, cut them in small square pieces.
  2. 2Also add 1/2 can of mushrooms. Put in saucepan to cook, 2 finely chopped shallots or garlic with a piece of butter.
  3. 3Add some Allemande sauce, reduce it, then add sweetbreads and mushrooms. Season with salt, pepper, nutmeg and a little chopped parsley, add the yelks of 2 eggs, stir well, then put in pan to cool.
  4. 4Shape them in any desired form: bread them with bread crumbs, fry in hot lard.
  5. 5Serve with mushroom or cream sauce. You may add beef tongues or truffles, cut in small squares.
