- as needed Bread crumbs
- as needed Lard (Originally lard. Substituted with butter or vegetable shortening for modern preference.)

Instructions
- 1Blanch and braise 1 dozen sweetbreads. When cooked, cut them in small square pieces.
- 2Also add 1/2 can of mushrooms. Put in saucepan to cook, 2 finely chopped shallots or garlic with a piece of butter.
- 3Add some Allemande sauce, reduce it, then add sweetbreads and mushrooms. Season with salt, pepper, nutmeg and a little chopped parsley, add the yelks of 2 eggs, stir well, then put in pan to cool.
- 4Shape them in any desired form: bread them with bread crumbs, fry in hot lard.
- 5Serve with mushroom or cream sauce. You may add beef tongues or truffles, cut in small squares.
