Cream Walnuts
A sweet treat featuring a creamy sugar base and walnuts.
Ingredients
- 2 cups Granulated Sugar
- 2/3 cup Water
- 1 teaspoon Vanilla Extract (Originally Royal Extract Vanilla.)
- 1 cup Walnuts, shelled
- 12 dates Fresh Dates
- 1/2 cup Granulated Sugar (for coating)
Instructions
- 1In a saucepan, combine 2 cups of sugar and 2/3 cup of water. Bring to a boil over medium heat, without stirring, until the syrup reaches the soft-ball stage (235-240°F or 113-116°C) and will spin a thread when dropped from a spoon. Remove from heat.
- 2Stir in 1 teaspoon of vanilla extract. Pour the hot syrup into a dish with a small amount of cold water. Stir briskly until the mixture turns white and creamy.
- 3Shell the walnuts. Using your fingers, make the cream into small round cakes. Press half a walnut onto each side of the cream cakes. Drop the cream walnut candies into sifted granulated sugar to coat.
- 4Take fresh dates and remove the stones. Fill the center of each date with the same cream mixture. Drop the cream-filled dates into sugar to coat.
