Cream Walnuts

A sweet treat featuring a creamy sugar base and walnuts.

Ingredients

  • 2 cups Granulated Sugar
  • 2/3 cup Water
  • 1 teaspoon Vanilla Extract (Originally Royal Extract Vanilla.)
  • 1 cup Walnuts, shelled
  • 12 dates Fresh Dates
  • 1/2 cup Granulated Sugar (for coating)

Instructions

  1. 1In a saucepan, combine 2 cups of sugar and 2/3 cup of water. Bring to a boil over medium heat, without stirring, until the syrup reaches the soft-ball stage (235-240°F or 113-116°C) and will spin a thread when dropped from a spoon. Remove from heat.
  2. 2Stir in 1 teaspoon of vanilla extract. Pour the hot syrup into a dish with a small amount of cold water. Stir briskly until the mixture turns white and creamy.
  3. 3Shell the walnuts. Using your fingers, make the cream into small round cakes. Press half a walnut onto each side of the cream cakes. Drop the cream walnut candies into sifted granulated sugar to coat.
  4. 4Take fresh dates and remove the stones. Fill the center of each date with the same cream mixture. Drop the cream-filled dates into sugar to coat.
