Cracker and Jam Pudding

Cracker and Jam Pudding

A simple baked pudding with crackers, jam, and a hint of lemon.

Ingredients

  • 3 Eggs
  • 1/2 cup Cracker crumbs
  • 1/2 cup Sugar
  • 1 tablespoonful Butter
  • 1 cup Milk
  • 1/2 lemon Lemon juice and grated peel
  • 3 tablespoonfuls Jam
  • as needed Sifted sugar (for serving)

Instructions

  1. 1Heat the milk and cracker crumbs together in a saucepan until the mixture is scalding. Remove from heat and set aside to cool.
  2. 2While the milk and crumbs are cooling, cream the butter and sugar together in a bowl until light and fluffy. Add the lemon juice and grated peel.
  3. 3Stir the beaten egg yolks into the butter and sugar mixture. Then, stir in the cooled cracker and milk mixture. Finally, gently fold in the beaten egg whites.
  4. 4Butter a baking dish. Spread the jam evenly over the bottom of the dish. Pour the cracker mixture over the jam. Bake in a preheated oven at 350°F (175°C) for 30 minutes, covered. Then, remove the cover and bake for an additional 15 minutes, or until the top is browned.
  5. 5Let the pudding cool completely before serving. Sprinkle with sifted sugar on top. If desired, a meringue can be added before removing from the oven.
