Corn Starch Crackers
A recipe for making corn starch crackers.
Ingredients
- 1 1/2 pints Flour
- 1/2 pint Corn starch
- 1/2 teaspoonful Salt
- 1 tablespoonful Sugar
- 1 tablespoonful Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
- 1 teaspoonful Royal Baking Powder
- 1/2 pint Milk
Instructions
- 1Sift together flour, corn starch, salt, sugar, and Royal Baking Powder. Rub in the butter (or vegetable shortening) until the mixture resembles coarse crumbs. Add milk and mix until a smooth, firm dough forms.
- 2Lightly flour a clean surface. Turn out the dough and give it a few quick, vigorous kneadings until it is completely smooth. Place the dough under a cloth and let it rest for 10 minutes.
- 3Roll the dough exceedingly thin with a rolling pin. Cut out crackers using a round cutter. Prick each cracker with a fork.
- 4Lay the crackers upon a slightly greased baking tin. Wash over with milk. Bake in a hot oven at 400-450°F (200-230°C) for 7-8 minutes, or until golden brown.
- 5Let the crackers cool completely. Store them in an airtight container for later use.
