Consommé Soup

A classic consommé soup recipe.

Ingredients

  • 1 chicken Chicken
  • 3 pounds Lean beef
  • 1 Onion
  • 1 Turnip
  • 2 Carrots
  • 1 bunch Sweet herbs
  • 7 quarts Cold water
  • 1/2 cup Sago
  • as needed Pepper
  • as needed Salt

Instructions

  1. 1Cut the beef into strips and joint the chicken. Slice the vegetables and chop the herbs.
  2. 2Place the chicken, beef, prepared vegetables, and herbs in a large pot with the cold water. Bring to a simmer and cook slowly for 6 hours.
  3. 3Remove the chicken and beef from the pot. Season with salt and pepper. Strain the soup, pulping the vegetables through a sieve.
  4. 4Divide the strained soup. Pour half of the soup over the meat in a jar. Place the jar in a pot of hot water and cook, covered, for 2 hours more.
  5. 5Heat the remaining soup and skim. Add the sago and simmer for 1/2 hour, then pour out. When the 2 hours have passed, pour out the stock in a bowl; when cold, put on ice.
