- 1 Turnip
- 2 Carrots
- 1 bunch Sweet herbs
- 7 quarts Cold water
- 1/2 cup Sago

Instructions
- 1Cut the beef into strips and joint the chicken. Slice the vegetables and chop the herbs.
- 2Place the chicken, beef, prepared vegetables, and herbs in a large pot with the cold water. Bring to a simmer and cook slowly for 6 hours.
- 3Remove the chicken and beef from the pot. Season with salt and pepper. Strain the soup, pulping the vegetables through a sieve.
- 4Divide the strained soup. Pour half of the soup over the meat in a jar. Place the jar in a pot of hot water and cook, covered, for 2 hours more.
- 5Heat the remaining soup and skim. Add the sago and simmer for 1/2 hour, then pour out. When the 2 hours have passed, pour out the stock in a bowl; when cold, put on ice.
