College Pudding
A simple pudding made with stale muffins or bread, currants, citrus peels, and eggs, baked in individual cups.
Ingredients
- 3 pieces Stale Royal Egg Muffins or Bread
- 1/2 cupful Currants
- 1/4 cupful Chopped Citron
- 1/4 cupful Chopped Orange Peel
- 1/4 cupful Chopped Lemon Peel
- 1/4 cupful Sugar
- 3 pieces Eggs
- 1 pint Milk
- 1 tablespoonful Butter
Instructions
- 1Grate the stale Royal Egg Muffins or Bread. Place the grated muffins or bread in a bowl.
- 2Pour boiling milk over the grated muffins or bread in the bowl. Cover with a plate and let it sit for 20 minutes. Then, add the beaten eggs, sugar, chopped citron, orange, and lemon peels, melted butter, and well-washed and picked currants. Mix well.
- 3Fill 6 well-greased cups with the mixture. Bake in a preheated oven at 425°F (220°C) for 25 minutes. When about to serve, turn the puddings out onto a platter and pour Wine Sauce No. 2 around them, and serve.
