Coffee Cake

A classic coffee cake recipe from the Royal Baker Pastry Cook.

Ingredients

  • 1 cupful Very strong brewed coffee
  • 1 cupful Butter
  • 2 cupfuls Granulated sugar
  • 3 each Eggs
  • 1 1/2 pints All-purpose flour
  • 1 1/2 teaspoonfuls Royal Baking Powder
  • 1 cupful Stoned raisins, cut in two
  • 1/2 cupful Chopped citron
  • 10 drops Royal Extract Allspice
  • 10 drops Royal Extract Nutmeg
  • 1/2 cupful Milk

Instructions

  1. 1In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes.
  2. 2Add the eggs one at a time, beating for 3-4 minutes after each addition, until fully incorporated.
  3. 3In a separate bowl, sift together the flour and baking powder.
  4. 4Gradually add the dry ingredients to the butter mixture, alternating with the coffee and milk. Mix until just combined. Then, fold in the raisins, citron, allspice, and nutmeg.
  5. 5Pour the batter into a paper-lined cake tin. Bake in a preheated oven at 350°F (175°C) for 50 minutes, or until a toothpick inserted into the center comes out clean.
