Coffee Cake
A classic coffee cake recipe from the Royal Baker Pastry Cook.
Ingredients
- 1 cupful Very strong brewed coffee
- 1 cupful Butter
- 2 cupfuls Granulated sugar
- 3 each Eggs
- 1 1/2 pints All-purpose flour
- 1 1/2 teaspoonfuls Royal Baking Powder
- 1 cupful Stoned raisins, cut in two
- 1/2 cupful Chopped citron
- 10 drops Royal Extract Allspice
- 10 drops Royal Extract Nutmeg
- 1/2 cupful Milk
Instructions
- 1In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes.
- 2Add the eggs one at a time, beating for 3-4 minutes after each addition, until fully incorporated.
- 3In a separate bowl, sift together the flour and baking powder.
- 4Gradually add the dry ingredients to the butter mixture, alternating with the coffee and milk. Mix until just combined. Then, fold in the raisins, citron, allspice, and nutmeg.
- 5Pour the batter into a paper-lined cake tin. Bake in a preheated oven at 350°F (175°C) for 50 minutes, or until a toothpick inserted into the center comes out clean.
