Codfish Balls

A classic dish of codfish and potatoes, fried to golden perfection.

Ingredients

  • 1/3 part Codfish
  • 2/3 part Potatoes
  • as needed Butter
  • as needed Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)

Instructions

  1. 1Place the codfish in cold water on the stovetop. Bring the water to a simmer, then remove from heat. Replace with cold water and repeat until the fish is fresh enough. Pick up the fish.
  2. 2Boil the potatoes until tender. Mash the potatoes. While the potatoes are still hot, mix them with the prepared codfish, using a ratio of 2/3 potatoes to 1/3 fish. Add plenty of butter.
  3. 3Form the mixture into balls. Heat plenty of butter or vegetable shortening in a pan until hot. Fry the balls until golden brown and cooked through.
