Codfish Balls
A classic dish of codfish and potatoes, fried to golden perfection.
Ingredients
- 1/3 part Codfish
- 2/3 part Potatoes
- as needed Butter
- as needed Butter (or vegetable shortening) (Originally lard. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
Instructions
- 1Place the codfish in cold water on the stovetop. Bring the water to a simmer, then remove from heat. Replace with cold water and repeat until the fish is fresh enough. Pick up the fish.
- 2Boil the potatoes until tender. Mash the potatoes. While the potatoes are still hot, mix them with the prepared codfish, using a ratio of 2/3 potatoes to 1/3 fish. Add plenty of butter.
- 3Form the mixture into balls. Heat plenty of butter or vegetable shortening in a pan until hot. Fry the balls until golden brown and cooked through.
