Clam Soup

A simple clam soup recipe.

Ingredients

  • as needed Clam juice
  • as needed Butter
  • as needed Clams, chopped
  • to taste Black pepper
  • to taste Salt
  • to taste Lemon juice
  • as needed Heavy cream or milk
  • as needed Crackers
  • to taste Nutmeg

Instructions

  1. 1Boil the juice of the clams in a saucepan. This may be from canned clams or fresh clams.
  2. 2In a small pan, melt a little butter. This is the drawn butter.
  3. 3Mix the drawn butter with the clam juice. Stir until it boils. Chop up the clams and put them in. Season to taste with pepper, salt, and a little lemon juice.
  4. 4Add cream or milk and crackers. Add nutmeg if desired.
  5. 5Simmer over a low fire for 1 1/2 hours.
