Clam Soup
A simple clam soup recipe.
Ingredients
- as needed Clam juice
- as needed Butter
- as needed Clams, chopped
- to taste Black pepper
- to taste Salt
- to taste Lemon juice
- as needed Heavy cream or milk
- as needed Crackers
- to taste Nutmeg
Instructions
- 1Boil the juice of the clams in a saucepan. This may be from canned clams or fresh clams.
- 2In a small pan, melt a little butter. This is the drawn butter.
- 3Mix the drawn butter with the clam juice. Stir until it boils. Chop up the clams and put them in. Season to taste with pepper, salt, and a little lemon juice.
- 4Add cream or milk and crackers. Add nutmeg if desired.
- 5Simmer over a low fire for 1 1/2 hours.
