Clam Fritters
Delicious and simple clam fritters.
Ingredients
- 50 small Clams
- 1 pint Flour
- 2 large Eggs
- 1/2 pint Milk
- as much as milk Clam liquor
- as needed Butter (or vegetable shortening) (Originally lard or beef drippings. Substituted with butter or vegetable shortening for modern preference.)
Instructions
- 1If using small clams, proceed to the next step. If using large clams, cut them in half. Dry the clams with a napkin.
- 2In a large bowl, whisk together the flour, eggs, milk, and clam liquor until the batter is free of lumps.
- 3Gently stir the prepared clams into the batter. Heat the butter or shortening in a frying pan over medium-high heat until it's hot. Drop spoonfuls of the clam batter into the hot fat. Fry until golden brown on one side, then flip and fry until the other side is also golden brown.
