Chocolate Custards

A classic chocolate custard recipe.

Ingredients

  • 2 ounces Grated chocolate
  • 2 tablespoonfuls Boiling water
  • 1 pint Milk
  • 1 pint Heavy cream
  • 1 pinch Salt
  • 3 ounces Sugar
  • 8 count Egg yolks

Instructions

  1. 1Pour 2 tablespoonfuls of boiling water over 2 ounces of grated chocolate. Let it stand near the heat until perfectly dissolved.
  2. 2Put the dissolved chocolate into 1 pint of milk mixed with 1 pint of heavy cream, a pinch of salt, and 3 ounces of sugar. Simmer over low heat for 10 minutes.
  3. 3Add the yolks of 8 well-beaten eggs gradually, stirring constantly until the mixture thickens. Then, remove from heat and pour out to cool.
