Chocolate Caramels

A classic caramel recipe with chocolate.

Ingredients

  • 2 cups Molasses
  • 1 cup Brown sugar
  • 1 cup Heavy cream or whole milk
  • 1/2 pound Semi-sweet chocolate
  • 1 piece (size of an egg) Butter

Instructions

  1. 1In a heavy-bottomed saucepan, combine the molasses, brown sugar, and cream or milk. Stir to combine.
  2. 2Add the chocolate and butter to the saucepan. Stir until the chocolate is melted and the butter is incorporated.
  3. 3Bring the mixture to a boil over medium heat, stirring constantly to prevent burning. Continue to boil until the mixture thickens. Test for doneness by dropping a small amount into cold water; it should form a soft ball.
  4. 4Pour the hot caramel mixture into a large, flat tin that has been well buttered. Let it cool until it is nearly cold.
  5. 5Once the caramel is nearly cold, cut it into small squares.
