Chocolate Caramels
A classic caramel recipe with chocolate.
Ingredients
- 2 cups Molasses
- 1 cup Brown sugar
- 1 cup Heavy cream or whole milk
- 1/2 pound Semi-sweet chocolate
- 1 piece (size of an egg) Butter
Instructions
- 1In a heavy-bottomed saucepan, combine the molasses, brown sugar, and cream or milk. Stir to combine.
- 2Add the chocolate and butter to the saucepan. Stir until the chocolate is melted and the butter is incorporated.
- 3Bring the mixture to a boil over medium heat, stirring constantly to prevent burning. Continue to boil until the mixture thickens. Test for doneness by dropping a small amount into cold water; it should form a soft ball.
- 4Pour the hot caramel mixture into a large, flat tin that has been well buttered. Let it cool until it is nearly cold.
- 5Once the caramel is nearly cold, cut it into small squares.
