Chicken Salad
A classic chicken salad recipe.
Ingredients
- 1 cup Cooked Chicken
- 1 cup Shredded Lettuce
- 2 count Egg Yolks
- 1/4 teaspoon Salt
- 4 tablespoons Salad Oil (e.g., vegetable or canola oil)
- 3 teaspoons Celery Extract
Instructions
- 1Cut the cooked chicken into narrow strips, about 2 inches long. Add an equal quantity of shredded lettuce to a bowl.
- 2In a separate bowl, beat the egg yolks. Lightly add salt. Gradually beat in the salad oil, a few drops at a time. Then, gradually add the celery extract. The mixture should be thick, like cream.
- 3Pour the dressing over the chicken and lettuce. Stir gently with a fork to combine. Place the salad in a glass dish.
