Chicken Fritters
A classic recipe for chicken fritters, using cold chicken pieces coated in a simple batter and fried until golden brown.
Ingredients
- as needed Cold chicken, cut into small pieces
- to taste Salt
- to taste Black pepper
- from 1 lemon Lemon juice
- 2 large Eggs
- 1 pint Whole milk
- as needed Flour
- for frying Vegetable oil or other frying oil
Instructions
- 1Cut the cold chicken into small, bite-sized pieces. Place the chicken pieces in a dish. Season with salt, pepper, and the juice of a lemon. Let the chicken marinate for 1 hour.
- 2In a bowl, whisk together the eggs and milk. Add a pinch of salt. Gradually whisk in flour, a little at a time, until the batter reaches a consistency that is not too stiff, but coats the back of a spoon.
- 3Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C). Stir the marinated chicken pieces into the batter. Drop spoonfuls of the batter-coated chicken into the hot oil. Fry the fritters until they are golden brown, about 3-4 minutes per side. Remove the fritters from the oil and drain them on paper towels. Serve immediately.
