Chicken Fritters

A classic recipe for chicken fritters, using cold chicken pieces coated in a simple batter and fried until golden brown.

Ingredients

  • as needed Cold chicken, cut into small pieces
  • to taste Salt
  • to taste Black pepper
  • from 1 lemon Lemon juice
  • 2 large Eggs
  • 1 pint Whole milk
  • as needed Flour
  • for frying Vegetable oil or other frying oil

Instructions

  1. 1Cut the cold chicken into small, bite-sized pieces. Place the chicken pieces in a dish. Season with salt, pepper, and the juice of a lemon. Let the chicken marinate for 1 hour.
  2. 2In a bowl, whisk together the eggs and milk. Add a pinch of salt. Gradually whisk in flour, a little at a time, until the batter reaches a consistency that is not too stiff, but coats the back of a spoon.
  3. 3Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C). Stir the marinated chicken pieces into the batter. Drop spoonfuls of the batter-coated chicken into the hot oil. Fry the fritters until they are golden brown, about 3-4 minutes per side. Remove the fritters from the oil and drain them on paper towels. Serve immediately.
