Chicken a l'Italienne

A classic chicken dish with a flavorful tomato sauce.

Ingredients

  • 1 cup Remains of cooked chicken, cut into bite-sized pieces
  • 12 Tomatoes, diced
  • 1 cup Chicken broth
  • 2 tablespoonfuls Onion, chopped
  • 1 tablespoonful Fresh parsley, chopped
  • 1 saltspoonful Salt
  • 1 saltspoonful White pepper
  • 1 saltspoonful Dried thyme (Originally Royal thyme. Substituted with dried thyme.)
  • 1 saltspoonful Dried summer savory
  • 1 tablespoonful Butter (or vegetable shortening) (Originally butter. Substituted with butter for modern preference. Can also use vegetable shortening for similar texture.)
  • as needed Lard (for frying) (For frying. Use a neutral oil like vegetable or canola oil if preferred.)
  • as needed Common Batter

Instructions

  1. 1Cut the remains of chicken into small, bite-sized pieces.
  2. 2Dip the chicken pieces into the Common Batter.
  3. 3Heat plenty of lard (or oil) in a pan until hot. Fry the battered chicken pieces until crisp and golden brown.
  4. 4Serve the fried chicken with Tomato Sauce.
