Cherry Jam

A classic cherry jam recipe.

Ingredients

  • 12 pounds Cherries
  • 1 pound Granulated Sugar

Instructions

  1. 1Wash the cherries. Remove the stems. Break the stones of some of the cherries (about half), and blanch them (briefly submerge in boiling water). This helps release the flavor.
  2. 2Combine the prepared cherries, sugar, and blanched cherry stones in a large, heavy-bottomed pot. Bring to a gentle boil over medium heat, stirring frequently to dissolve the sugar. Reduce the heat and simmer gently until the jam thickens and becomes clear, about 30 minutes. Test for doneness by placing a small spoonful on a chilled plate; it should wrinkle when pushed with your finger.
