Cheese Cakes (Cocoanut)

A simple recipe for coconut cheese cakes from the Royal Baker Pastry Cook.

Ingredients

  • 1 portion Paste (prepared pastry dough) (Paste is a type of pastry dough. Recipe does not specify the type of paste, so use your preferred pastry dough.)
  • 1 cupful Cocoanut (shredded)
  • 1 cupful Milk curd
  • 1 cupful Heavy cream
  • 5 yolks Egg yolks
  • 1 cupful Granulated sugar
  • 1 teaspoonful Rose extract

Instructions

  1. 1In a thick saucepan, combine the cream, milk curd, egg yolks, sugar, and cocoanut. Place the saucepan over medium heat.
  2. 2Cook the mixture, stirring constantly, until it thickens. Remove from heat.
  3. 3Once the mixture has cooled completely, add the rose extract and stir to combine.
  4. 4Fill paté pans lined with the paste with the coconut mixture. Bake in a preheated oven at 350°F (175°C) for 10 minutes, or until the pastry is golden brown.
