Cauliflower
A classic cauliflower gratin recipe.
Ingredients
- 1 head Cauliflower
- as needed Salt
- 1 piece (size of an egg) Butter
- 1 tablespoonful All-purpose flour
- 1 gill Milk
- as needed Grated cheese
- as needed Black pepper
- as needed Bread crumbs
Instructions
- 1Plunge a head of cauliflower in salt-water several times to remove any insects. Boil for 10 minutes in salt-water, then drain in a sieve and set aside.
- 2In a buttered dish, melt a piece of butter (size of an egg). Add 1 tablespoonful of flour and stir for 1 minute. Add 1 gill of milk, a quantity of grated cheese, pepper, and salt. Stir the sauce until it boils.
- 3Pour the sauce over the cauliflower. Sprinkle with a few browned bread crumbs. Set in a moderate oven at 350°F (175°C) for a few minutes to bake until heated through and the breadcrumbs are golden brown.
