Candied Popcorn

A classic treat of candied popcorn.

Ingredients

  • 1 tablespoonful Butter (Originally butter.)
  • 3 tablespoonfuls Water
  • 1 teacupful White granulated sugar (Originally white pulverized sugar.)
  • 3 quarts Popped popcorn (Use freshly popped popcorn.)

Instructions

  1. 1In a medium iron kettle, combine the butter, water, and sugar. Heat over medium heat, stirring until the sugar dissolves.
  2. 2Boil the mixture until it reaches the hard-crack stage (about 300-310°F or 149-154°C). Use a candy thermometer to check the temperature.
  3. 3Remove the kettle from the heat and immediately throw in the popped corn. Stir briskly until the candy is evenly distributed over the corn.
  4. 4Stir the mixture until it cools slightly. Continue stirring until each grain of popcorn is separate and crystallized with sugar. Be careful not to burn the popcorn.
