Cabbage Salad
A simple cabbage salad with a vinegar dressing.
Ingredients
- 1 head Cabbage
- 1 teaspoon Salt
- 1 large Egg
- 1/2 pint White Vinegar
- 2 tablespoons Mustard
- to taste Pepper
- to taste Sugar
Instructions
- 1Chop the cabbage finely. Sprinkle with salt and let stand overnight in the refrigerator.
- 2Beat the egg thoroughly. In a saucepan, bring the vinegar to a boil. In a separate bowl, rub the mustard into some vinegar to form a smooth paste. Add the mustard paste to the boiling vinegar. Season with pepper and sugar to taste. Let the dressing come to a boil.
- 3Pour the hot dressing over the cabbage and stir thoroughly to combine. Serve immediately or chill before serving.
