Cabbage Salad

A simple cabbage salad with a vinegar dressing.

Ingredients

  • 1 head Cabbage
  • 1 teaspoon Salt
  • 1 large Egg
  • 1/2 pint White Vinegar
  • 2 tablespoons Mustard
  • to taste Pepper
  • to taste Sugar

Instructions

  1. 1Chop the cabbage finely. Sprinkle with salt and let stand overnight in the refrigerator.
  2. 2Beat the egg thoroughly. In a saucepan, bring the vinegar to a boil. In a separate bowl, rub the mustard into some vinegar to form a smooth paste. Add the mustard paste to the boiling vinegar. Season with pepper and sugar to taste. Let the dressing come to a boil.
  3. 3Pour the hot dressing over the cabbage and stir thoroughly to combine. Serve immediately or chill before serving.
