Bread Sauce

A classic sauce made with bread, milk, and onion.

Ingredients

  • 1 large Large onion
  • 1 teaspoon Black peppercorns
  • 2 cups Whole milk
  • 2 cups Grated stale white bread
  • 2 tablespoons Butter
  • 1 teaspoon All-purpose flour

Instructions

  1. 1Quarter the onion. In a saucepan, combine the onion, black peppercorns, and milk. Bring to a simmer over medium heat and cook until the onion is softened, about 15 minutes. (175°F / 80°C)
  2. 2Strain the milk mixture over the grated stale bread. Cover and let it sit for about an hour.
  3. 3In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Add the bread mixture and bring to a simmer, stirring until the sauce thickens. Serve hot.
