Bread Griddle Cakes

A simple recipe for griddle cakes made with bread.

Ingredients

  • 1/2 lb. Bread
  • 1 pint Flour
  • 1 teaspoonful Brown sugar
  • 1/2 teaspoonful Salt
  • 1 1/2 teaspoonfuls Royal Baking Powder
  • 3/4 pint Milk
  • 1 Egg
  • as needed Sugar
  • as needed Cream

Instructions

  1. 1Remove the crust from the bread. Steep the bread in warm water until thoroughly soaked. Then, wring the bread dry in a towel.
  2. 2Dilute the soaked bread with the beaten egg and milk. In a separate bowl, sift together the flour, sugar, salt, and baking powder. Add the dry ingredients to the prepared bread mixture and mix together until a smooth batter forms.
  3. 3Heat a griddle over medium heat. Pour 1/4 cup of batter onto the hot griddle for each cake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  4. 4Serve the griddle cakes immediately with sugar and cream.
