Boston Brown Bread
A traditional Boston Brown Bread recipe.
Ingredients
- 1/2 pint All-purpose flour
- 1 pint Cornmeal
- 1/2 pint Rye flour
- 2 Potatoes
- 1 teaspoon Salt
- 1 tablespoon Brown sugar
- 2 teaspoons Baking powder
- 1/2 pint Water
Instructions
- 1In a large bowl, sift together the flour, cornmeal, rye flour, sugar, salt, and baking powder.
- 2Peel, wash, and boil the potatoes until they are well cooked. Rub them through a sieve, diluting with some of the water.
- 3Once the potato mixture is quite cold, use it to mix with the flour mixture, creating a batter similar to cake batter.
- 4Pour the batter into a well-greased mold with a cover. Place the mold in a saucepan half-full of boiling water, ensuring the water does not get into the loaf. Simmer for 1 hour. Remove the loaf, take off the cover, and finish by baking in a moderately hot oven at 375°F (190°C) for 30 minutes.
