Boston Baked Beans No. 2

A classic Boston baked beans recipe.

Ingredients

  • 1 quart White beans
  • 2 quarts Water
  • 1 pound Salt pork
  • as needed Black pepper
  • 1 tablespoon Molasses
  • as needed Water

Instructions

  1. 1Place 1 quart of white beans in a tin pan and cover with 2 quarts of lukewarm water. Let it sit on the back of the stove or a warm place for several hours, ideally starting early in the morning (around 8 o'clock).
  2. 2Prepare an earthen bean-pot. Place the uncooked salt pork in the bottom of the pot.
  3. 3Cover the salt pork with the soaked beans. Add pepper (no salt, as the pork is sufficiently salty) and 1 tablespoon of molasses. Fill the pot with water. Set in a moderate oven at 350°F (175°C) and bake slowly for 6 hours, occasionally adding water if necessary to keep the beans moist.
