Boiled Bass, or Other Fish
A simple recipe for boiling fish, with a vinegar and spice-infused broth, and finished with drawn butter and lemon.
Ingredients
- as needed sufficient Water
- 1/2 cup White Vinegar
- 1 teaspoonful Salt
- 1 Onion
- 1 dozen Black Peppercorns
- 1 blade Mace
- 1 Fish (Bass or Other)
- 1 cup Butter (Drawn butter is butter that has been melted and clarified. The original recipe calls for 'drawn butter based upon the liquor in which fish was boiled'.)
- 1/2 Lemon Juice
Instructions
- 1In a pot, add sufficient water to allow the fish to swim easily. Add the vinegar, salt, onion, peppercorns, and mace.
- 2If desired, sew up the fish in a piece of clean net or muslin, fitted to its shape. This is optional.
- 3Heat the broth slowly for the first 15 minutes (1/4 hour). Then, boil the fish for 8 minutes at a fast boil. The total cooking time is approximately 23 minutes.
- 4Remove the fish from the net (if used). Pour the drawn butter over the fish and stir in the lemon juice.
