Black or Red Currant Jam

A classic jam recipe using currants and sugar.

Ingredients

  • 1 pound Currants
  • 3/4 pound Granulated Sugar

Instructions

  1. 1Gather currants on a fine day and pick them from their stalks. This will take about 10 minutes.
  2. 2Place the prepared currants and sugar (broken into small pieces) into a preserving pan. This should take about 5 minutes.
  3. 3Bring the mixture gradually to a boil, then let it simmer for 30 minutes, removing any scum that rises to the surface. Stir the jam constantly to prevent sticking.
  4. 4Once the jam is done, put it into sterilized pots. Cover the jam with brandy paper or paper steeped in starch, and tie them down closely.
