Biscuit Glace
A frozen dessert with a creamy base and macaroon pieces.
Ingredients
- 1 1/2 pints Heavy cream
- 12 ounces Granulated sugar
- 8 Egg yolks
- 1 tablespoonful Vanilla extract
- 6 ounces Crisp macaroons
- 1 tablespoonful Vanilla extract
Instructions
- 1In a mortar, pound the macaroons into a fine dust. Set aside.
- 2In a saucepan, combine the heavy cream, sugar, egg yolks, and 1 tablespoonful of vanilla extract. Place the mixture over medium heat and stir constantly until it begins to thicken. This should take about 10-15 minutes.
- 3Strain the mixture through a fine-mesh sieve into a bowl. Place the bowl in the freezer and let it chill until it is nearly frozen, about 30 minutes.
- 4Once the mixture is nearly frozen, mix in the macaroon dust and the remaining 1 tablespoonful of vanilla extract. Continue freezing until the biscuit glace is fully frozen, about 15-20 minutes.
