Beef's Tongue

A classic recipe for preparing beef tongue with a simple sauce.

Ingredients

  • 1 large Beef tongue
  • 1 teaspoon Salt
  • 2 tablespoons Butter
  • 1 tablespoon All-purpose flour
  • to taste Black pepper
  • 1 tablespoon Lemon juice
  • 2 small Pickled cucumbers

Instructions

  1. 1Wash the beef tongue thoroughly in three changes of cold water to remove any impurities. Place the tongue in a large pot and cover with boiling water. Add salt.
  2. 2Cook the tongue in the boiling water for approximately 12 minutes per pound. The cooking time will vary depending on the size of the tongue. Once cooked, remove the tongue from the pot and let it cool slightly. While still warm, strip off the skin.
  3. 3Strain about 1 cup of the cooking liquor from the pot. Set it over medium heat. In a separate pan, melt the butter. Whisk in the flour until smooth. Gradually whisk in the strained liquor. Season with pepper to taste. Add the lemon juice and chopped pickled cucumbers. Simmer until the sauce has thickened.
  4. 4Trim away the root of the tongue. Slice the tongue and serve with the prepared sauce.
