Beef Soup No. 2

A classic beef soup recipe.

Ingredients

  • 5 pounds Beef shin
  • 1 quart Water
  • 1 head Celery
  • 1 Onion
  • 4 small Carrots
  • 3 large Carrots
  • 2 Turnips
  • 1 bunch Sweet herbs
  • to taste Black pepper
  • to taste Salt

Instructions

  1. 1Cut the meat from the bone. Place the bones in a large stewpan with the water.
  2. 2Let the bones and water boil slowly for 4 hours. Then, strain the liquid into a large basin. Allow to cool completely.
  3. 3Once cold, remove the cake of fat from the surface. Cut the meat into small pieces. Put the meat into the stewpan with the strained gravy, the tied-together herbs, celery, onions, carrots, and turnips, all cut small.
  4. 4Let the soup simmer slowly for 5 hours, seasoning with pepper and salt to taste. When done, remove the herbs.
  5. 5The soup is now ready to serve.
