Beef Soup No. 2
A classic beef soup recipe.
Ingredients
- 5 pounds Beef shin
- 1 quart Water
- 1 head Celery
- 1 Onion
- 4 small Carrots
- 3 large Carrots
- 2 Turnips
- 1 bunch Sweet herbs
- to taste Black pepper
- to taste Salt
Instructions
- 1Cut the meat from the bone. Place the bones in a large stewpan with the water.
- 2Let the bones and water boil slowly for 4 hours. Then, strain the liquid into a large basin. Allow to cool completely.
- 3Once cold, remove the cake of fat from the surface. Cut the meat into small pieces. Put the meat into the stewpan with the strained gravy, the tied-together herbs, celery, onions, carrots, and turnips, all cut small.
- 4Let the soup simmer slowly for 5 hours, seasoning with pepper and salt to taste. When done, remove the herbs.
- 5The soup is now ready to serve.
