Beef Soup No. 1
A classic beef soup recipe.
Ingredients
- Beef soup bone
- to taste Spices
- to taste Brandy
- small teacupful Butter
- Flour
- to taste Vermicelli
- to taste Grated carrot
- 3 Eggs
Instructions
- 1Boil the beef soup bone the day before you want to make the soup. This will create the broth base.
- 2The next day, skim the grease from the broth. Melt any jelly that has formed. Add spices and brandy to taste.
- 3Rub a small teacupful of butter into browned flour. Add this mixture to the soup to thicken it. Add vermicelli and grated carrot to taste.
- 4Boil the eggs hard. Mash them smooth.
- 5Put the mashed eggs in a tureen and pour the soup over them.
