Beef Soup No. 1

A classic beef soup recipe.

Ingredients

  • Beef soup bone
  • to taste Spices
  • to taste Brandy
  • small teacupful Butter
  • Flour
  • to taste Vermicelli
  • to taste Grated carrot
  • 3 Eggs

Instructions

  1. 1Boil the beef soup bone the day before you want to make the soup. This will create the broth base.
  2. 2The next day, skim the grease from the broth. Melt any jelly that has formed. Add spices and brandy to taste.
  3. 3Rub a small teacupful of butter into browned flour. Add this mixture to the soup to thicken it. Add vermicelli and grated carrot to taste.
  4. 4Boil the eggs hard. Mash them smooth.
  5. 5Put the mashed eggs in a tureen and pour the soup over them.
