Batter Pudding (with Fruit)

A simple baked pudding with fruit.

Ingredients

  • 1 cupful All-purpose flour
  • 1 teaspoonful Baking powder
  • 1 pint Whole milk
  • 4 Eggs
  • 2 cupfuls Fruit (prepared)
  • 1 1/2 cupfuls Granulated sugar

Instructions

  1. 1Sift the flour, sugar, and baking powder together in a large bowl. Prepare the fruit as usual (e.g., wash, peel, chop).
  2. 2In the bowl with the dry ingredients, add the beaten eggs, milk, and prepared fruit. Stir until just combined.
  3. 3Pour the batter into a well-buttered pudding dish. Bake in a preheated oven at 425°F (220°C) for 40 minutes, or until a toothpick inserted into the center comes out clean.
  4. 4Serve warm with Wine Sauce (recipe not provided).
