Batter Pudding (Boiled)

A simple boiled pudding served with a spiced sauce.

Ingredients

  • 1 1/2 cupfuls Flour
  • 1 teaspoonful Baking powder (Originally Royal Baking Powder.)
  • 1/2 teaspoonful Salt
  • 1 tablespoonful Butter
  • 10 drops Nutmeg extract (Originally Royal Extract Nutmeg.)
  • 2 Eggs
  • 1 pint Milk
  • 3/4 pint Water
  • 1 cupful Sugar
  • 1 teaspoonful Cloves extract (Originally Royal Extract Cloves.)
  • 1 teaspoonful Ginger extract (Originally Royal Extract Ginger.)

Instructions

  1. 1Sift the flour, salt, and baking powder together in a large bowl. Rub in the butter until the mixture resembles breadcrumbs. In a separate bowl, beat the eggs. Add the beaten eggs and milk to the flour mixture and mix until a smooth batter forms, similar to muffin batter.
  2. 2Pour the batter into a well-buttered pudding mold. Place the mold in a saucepan and add boiling water to reach two-thirds up the sides of the mold. Cover the saucepan and steam for 1 hour.
  3. 3In a saucepan, bring the water and sugar to a boil. Boil for 20 minutes. Remove from heat and stir in the nutmeg extract, clove extract, and ginger extract.
  4. 4Serve the steamed pudding warm with the spice sauce.
