Batter Pudding (Boiled)
A simple boiled pudding served with a spiced sauce.
Ingredients
- 1 1/2 cupfuls Flour
- 1 teaspoonful Baking powder (Originally Royal Baking Powder.)
- 1/2 teaspoonful Salt
- 1 tablespoonful Butter
- 10 drops Nutmeg extract (Originally Royal Extract Nutmeg.)
- 2 Eggs
- 1 pint Milk
- 3/4 pint Water
- 1 cupful Sugar
- 1 teaspoonful Cloves extract (Originally Royal Extract Cloves.)
- 1 teaspoonful Ginger extract (Originally Royal Extract Ginger.)
Instructions
- 1Sift the flour, salt, and baking powder together in a large bowl. Rub in the butter until the mixture resembles breadcrumbs. In a separate bowl, beat the eggs. Add the beaten eggs and milk to the flour mixture and mix until a smooth batter forms, similar to muffin batter.
- 2Pour the batter into a well-buttered pudding mold. Place the mold in a saucepan and add boiling water to reach two-thirds up the sides of the mold. Cover the saucepan and steam for 1 hour.
- 3In a saucepan, bring the water and sugar to a boil. Boil for 20 minutes. Remove from heat and stir in the nutmeg extract, clove extract, and ginger extract.
- 4Serve the steamed pudding warm with the spice sauce.
