Banana Custard
A classic banana custard recipe.
Ingredients
- 2 tablespoonfuls Cornstarch
- as needed Cold water
- 1 cup Granulated sugar
- 1/2 cup Butter
- 3 Eggs
- as needed Ripe bananas
- 1/2 teacupful Pulverized pink sugar
Instructions
- 1In a small bowl, dissolve the cornstarch in enough cold water. In a pudding mould or earthen dish, combine the granulated sugar and butter.
- 2Pour enough boiling water into the pudding mould to make a thick custard. Stir until combined.
- 3Beat the whites of three eggs until stiff peaks form. Gently fold the egg whites into the custard. Bake in a preheated oven at 350°F (175°C) for 15 minutes, or place the dish in a pot of boiling water and cook for the same amount of time. Let cool completely.
- 4Once the custard is cold, remove any crust that has formed on top. Finely mince the ripe bananas. Mix the bananas with the custard and pour into a serving dish. Top with a meringue made from the beaten whites of 3 eggs and 1/2 teacupful of pulverized pink sugar.
