Apple Tapioca Pudding

A simple apple pudding with tapioca, flavored with lemon.

Ingredients

  • as needed Apples
  • as needed Lemon peel
  • 1/2 pint Tapioca
  • 1 quart Lukewarm water
  • as needed Salt
  • as needed Lemon juice
  • as needed Cream
  • as needed Sugar

Instructions

  1. 1Peel and core enough apples to fill your baking dish. Place a small piece of lemon peel inside each apple.
  2. 2Soak the tapioca in lukewarm water for 1 hour. Add a pinch of salt.
  3. 3Flavor the soaked tapioca with lemon juice. Pour the tapioca mixture over the prepared apples. Bake in a preheated oven at 350°F (175°C) until the apples are tender, about 30 minutes.
  4. 4Let the pudding cool completely. Serve cold with cream and sugar.
